Luscious and refreshingly good! Perfect on its own or to complement a meaty BBQ. Easy and keeps well refrigerated for few days.
Ingredients:
- 6 beetroots boiled skin on and shredded
- 1 can of green peas drained
- 1 small brown onion diced
- 6 dill gherkins chopped
- 1 tsp sea salt
- 3 tbsp virgin olive oil
Method:
- In a large bowl, mix the beetroot, peas, onion and gherkins.
- Dress with oil.
- Season with salt.
- Voila ready to serve!
